Himalayan Sunset is a traditionally stone husked and double washed red rice grown at heights over 8,000ft in the Paro Valley of the Himalayas. This rice is watered by the mineral rich flows from glacial deposits. We have ethically sourced it from a local supplier, in a small family farm high in the Himalayas. The farm is part of a rice growing collaborative that are seeking to protect their way of life from the ravages of climate change. The collaborative is working to combat the advancing higher temperatures which are forcing growers higher into the mountains to continue growing this valuable rice.
Combine about 2-2.5 cups of water with 1 cup of rice and a small amount of salt (to taste). Bring to the boil, cover and simmer for about 20 minutes. Let stand away from the heat for a few minutes then fluff and serve.

We ethically source all our boutique rice from growers who do not use synthetic pesticides and herbicides which threaten insect populations, contaminate water sources and can have ecosystem-wide knock-on effects. We accept that rice is a carbon-intensive carbohydrate but not nearly as high as that generated by animal farming, and therefore more sustainable in terms of ensuring the welfare of our environment. When we accept a submission from a rice grower we consider carefully how the rice growing affects the surrounding animal husbandry.
